Ingredients:
1 bunch kale
20g parmesan
80g golden raisins
80g lemon juice
60g pine nuts
28g EVOO
Salt & pepper, to taste
500g sweet potato
100g butter
100g water
Salt, to taste
Method:
1. Peel sweet potato and slice thinly, add to saucepan over medium heat with butter, water and salt. Cook with lid on so it does not lose too much water. Remove lid when sweet potato is beginning to soften and cook until soft.Â
2. Meanwhile, thinly slice the kale, then toss with remaining ingredients.
3. Puree the sweet potato with hand blender.Â
4. Serve in centre of a plate and top with the kale salad
